Mixed Vegetable Slaw
Ingredients

Salad
227 g (8 oz) Napa cabbage, shredded thinly
29 g (1 oz) snow peas (about 5), julienne
57 g (2 oz) carrots (2 small), matchstick
30-50 g (1 Tbsp) jalapeno, minced (1 small)
29 g (1 oz) chopped cilantro
Dressing
1 Tbsp ginger root, juiced (about 1 inch)
29 g (1 oz) rice vinegar
1 Tbsp rice syrup or agave syrup
½ tsp sea salt
57 g (2 oz) canola oil
29 g (1 oz) toasted sesame oil
Garnish
2-3 Tbsp black or white sesame seeds, to garnish
Prep Method
Combine cabbage, snow peas, carrots, jalapeno, and cilantro in a medium/large bowl.
Combine dressing ingredients in a blender until creamy.
Pour dressing over vegetables and mix well.
Garnish with black sesame seeds.
