Mixed Vegetable Slaw

Ingredients

Salad

  • 227 g (8 oz) Napa cabbage, shredded thinly

  • 29 g (1 oz) snow peas (about 5), julienne

  • 57 g (2 oz) carrots (2 small), matchstick

  • 30-50 g (1 Tbsp) jalapeno, minced (1 small)

  • 29 g (1 oz) chopped cilantro

Dressing

  • 1 Tbsp ginger root, juiced (about 1 inch)

  • 29 g (1 oz) rice vinegar

  • 1 Tbsp rice syrup or agave syrup

  • ½ tsp sea salt

  • 57 g (2 oz) canola oil

  • 29 g (1 oz) toasted sesame oil

Garnish

  • 2-3 Tbsp black or white sesame seeds, to garnish

Prep Method

  1. Combine cabbage, snow peas, carrots, jalapeno, and cilantro in a medium/large bowl.

  2. Combine dressing ingredients in a blender until creamy.

  3. Pour dressing over vegetables and mix well.

  4. Garnish with black sesame seeds.
