Broiled Tomatoes

Ingredients

Total Yield: 2 serving

  • 681 g  (1 ½ lbs) tomatoes

  • 29 g (1 fl oz) olive oil

  • Salt and pepper to taste

Toppings

  • 114 g (4 oz) dry bread crumbs

  • 57 g (2 fl oz) olive oil

  • 1 tsp dried oregano

  • 1 tsp garlic powder

Prep Method

  1. Wash the tomatoes, cut the core ends and slice crosswise into ½ inch slices.

  2. Place the slices in a single layer on a lightly greased baking sheet.

  3. Drizzle 1 oz of the olive oil over the tomatoes and sprinkle with salt and pepper.

  4. Place in a broiler, 4 inches from the heat and broil for 2 minutes.

  5. Mix the breadcrumbs with remaining 1 oz olive oil, oregano, and garlic powder.

  6. Add breadcrumb mixture on top of the tomatoes and broil again just until bubbling and hot but still firm enough to hold shape.

  7. Serve 2 slices per portion. Drizzle with infused basil oil from recipe above.
