Spiced Fruit Salad

Ingredients

Total Yield: 2 servings

  • 2 fl oz water

  • 24 g (1 oz) brown rice syrup (or increase the maple syrup)

  • 25 g (1 Tbsp) maple syrup

  • 2 whole cardamom pods, crushed

  • 1 cinnamon stick

  • ½ tsp vanilla extract

  • 454 g (16 oz) oranges, supremed (about 2)

  • 227 g (8 oz) kiwis, peeled and sliced (about 2)

  • 227 g (8 oz) seedless red grapes, sliced in half

  • 10 g (2 tsp) lime juice

  • 29 g (1 oz) sliced almonds, toasted

Prep Method

1. In a small saucepan, combine water, rice syrup, maple syrup, crushed cardamom pods and cinnamon stick. Whisk together and bring to boil. Reduce until mixture becomes thick and syrupy, about 3-4 minutes.

2. Add vanilla extract and continue to cook for another 2 minutes. Remove from heat and remove cardamom pods and cinnamon.

3. In a medium bowl, combine oranges, kiwis, and grapes. Combine syrup mixture with fruit and stir gently to combine. Taste and adjust seasonings, adding lime juice as needed.

4. Cover and refrigerate for at least 1 hour and up to 36 hours to allow flavors to combine. When ready to serve, sprinkle with toasted almonds.
